Happy Thanksgiving to our friends in Canada (October 8th) and for those of us here in the U.S., the holidays are right around the corner. We hope as you gather around the table this holiday season with your family and friends that you’ll enjoy this delicious recipe from LON’s at the Hermosa Inn.

LON’s Maple Roasted Sweet Potatoes
Yield: 8 servings

Ingredients (in order)

Sweet Potatoes 2 lbs
Crystallized Ginger 1/2 tbsp minced
Maple Syrup 1/2 cup
Butter – diced 2 tbsp
Salt 2 tsp
Pepper 1 tsp
Star Anise 1/2 tsp
Nutmeg 1/2 tsp
Cinnamon 1tsp
Foil Bag 1 each


Peel and cut potatoes into 1 inch cubes. Mince crystallized ginger. Toss potatoes, ginger, butter, salt, pepper, nutmeg and star anise with maple syrup. Place all ingredients in foil bag and seal. Place bag on grill and allow to cook for 30 minutes or until fully cooked.
