Cultivated from land once mined for natural resources, menu favorites include fresh chopped salads, decadent burgers, and grilled seafood. Open for breakfast, lunch and dinner, Rico's menu is focused on fresh favorites that are inspired by and feature seasonal ingredients from the restaurant's vibrant urban garden including the Squaw Peak Chopped Salad, Farm Burger and Grilled Salmon with Jalapeno Polenta. Rico's fully-stocked bar offers a variety of adult indulgences from tasty beer flights to signature Rough Rider Brews.

  • Chef Bio: Pointe Hilton Squaw Peak Resort has appointed Rebecca Tillman as Executive Chef. With an approach to food that is simple, back-to-basics and focused on local seasonal ingredients, Tillman will oversee culinary operations for the resort and its dining outlets, including Rico's American Grill. In her new position as Exec. Chef, Tillman has also become the only female Executive Chef at a Phoenix Resort. An Arizona native who was born and raised in Phoenix, Tillman brings 15 years of experience in the hospitality industry, including positions at the AZ Biltmore Resort & Spa in Phoenix, Destination Kholer in Wisconsin and the Inn on Biltmore Estate and The Biltmore Estate in Asheville, N.C. A graduate of the School of Culinary Arts at The Art Institute of Phoenix, Tillman has also devoted countless hours to food-related philanthropic causes and looks forward to continuing those efforts in Phoenix. When not at work, Tillman enjoys new restaurants with her husband and three young sons.
